Salmon - Two Ways

Today is Good Friday. This means that we abstain from eating meat. After a day of fasting and light meals, I took two pieces of salmon tails out from the freezer to cook salmon two ways. I asked my hubby to lightly pan fry the salmon pieces, seasoned with salt and black pepper. The salmon was pan-fried for 3 mins skin-side down first (to crisp the skin) and then another 1 min on other side. After that, flipped it back to the skin side and place it into the oven for 1 min (oven temp 180 degrees C).


The first way was Salmon Teriyaki. This was for my two girls who cannot eat spicy food. Basically, I saute some chopped garlic and sliced ginger with some peanut oil in a saucepan. When fragrant, I added light soya sauce, some mirin and palm sugar (you can use white/raw sugar). Add some water and place the lid on the saucepan to simmer and reduce the sauce. Taste and pour over the piece of pan-fried salmon.


The second way was Salmon Red Curry. I also added some green beans (sliced), red bell pepper (capsicum) and baby corn. This meant it was a one-dish with protein and vegetables. I did not add the pan-fried salmon to the curry. Instead, I served the curry sauce separate. We just spooned the curry over the pan-fried salmon on our plate. The red curry was delicious! My hubby said it can be served in a restaurant. It is a new way to serve salmon for us.

Both dishes served with steamed jasmine rice. Yum!
