Lemon Meringue Tart

Channeling the domestic goddess today, I made dessert for my family - something unheard of on a working day. First, I made the lemon curd or butter. Then I cheated and used store bought pastry which I blind baked earlier. Spoon the lemon curd mixture into the pastry cases. To make the meringue, I whipped five egg whites with 300gm caster sugar and 1/4 tsp of cream of tartar. I use a Wilton #22 star to pipe the meringue on top of the lemon curd.


Bake in the oven for about 5 minutes until the meringue peaks are light golden. Set aside to cool completely.
