Menu Plan - Week 5

On the home run now.... Spoke to my Mum over the weekend, and she's looking forward to coming home. Miss C is counting down the days (yes days now no more weeks). It took me ages to come up with the menu for this week, a bit slow and couldn't decide what to cook. I had to troll through my Excel spreadsheet of recipes to get some inspiration.

  • Monday - Pear and Carrot soup with pork shin; Steamed spare ribs with black bean sauce; Stir-fry Sweet peas and Carrots with fishcake; Peking Duck wraps (as requested by Miss C) served with rice.
  • Tuesday - some pasta dish cooked by hubby (this is easy for him on a weekday)
  • Wednesday - Shepherd's Pie
  • Thursday - in laws
  • Friday - eat out
I will have to this again in a few weeks when my Mum travels again.

Menu Plan - Week 3

Things were a little hectic towards the end of last week and I felt the stress of preparing the evening meals at the end of the day. Even more grateful to my Mum who has everything prepared and ready to eat by the time I arrive home from work.

Here's what I have planned for the coming week:

  • Monday - Pan-fried pork chop with gravy; stir-fry green vegie. Serve with rice.
  • Tuesday - Baked pasta with minced beef and vegies (similar to spag bog but using penne instead and sprinkling grated cheese on top and into the oven to brown).
  • Wednesday - Chinese clear soup (lotus root and peanuts), steam fish and tofu. Serve with rice.
  • Thursday - at in-laws
  • Friday - take-out or eat out.

Menu Plan - Week 2

Week 1 is nearly over and I am happy to report we're doing OK. Between hubby, my in-laws and I, we managed to cook the meals as planned. No one was too stressed which was good. Lucky my Mum had also pre-cooked a curry, tau yew bak (soy sauce pork), chinese style chicken stew and mui choy pork and freeze those dishes for us. These are ones I will use mid-week when time is short between getting home from work and driving the girls to their activities.

My two girls have also been helpful around the house - setting the table and helping with the cleaning up after - without hubby and I asking.

Next week's meal plan:

  • Monday - Creamy Chicken and Vegetable Pie - will make this on Sunday night to bake on Monday. Another busy evening with Yr 9 subject selection at school for A.
  • Tuesday - Pasta with Prawns and Chorizo and side salad.
  • Wednesday - Freezer meal - chicken curry. I'll cook a stir-fry greens to accompany rice. Might try to make a Chinese style soup too.
  • Thursday - dinner at in-laws.
  • Friday - take-out or dinner out.

Menu Plan - Week 1

Do you plan your weekly meals or do you decide what to cook on the day? I usually do not plan our meals because I cook on weekends and at times, it's difficult to decide where we will be and what to eat. My Mum who helps with cooking on weekdays is going away for 5 weeks to visit my sis. I have planned our evening meals for the coming week and plan to do so each week whilst Mum is away. This will help Chris and I to get food ready and meals have to be easy to prep.

On the menu this week:

Monday: Homemade beef burgers
Tuesday: Beef stroganoff with parpadelle pasta
Wednesday: Freezer meal: Soy sauce pork belly (tau yew bak). I'll boil the eggs to add in and stir fry green vegies and rice.
Thursday: Dinner at in-laws
Friday: Take-away or eat out
