Masterchef - Sticky Date Pudding with Butterscotch Sauce and Almond Praline

The Australian Masterchef 2009 series has recently ended with Julie Goodwin winning the series. I made the sticky date pudding from the show for dessert. The pudding was soft and moist. This method is different to my earlier sticky date pudding recipe.

With this recipe, you do not process the dates in the food processor, instead you cook them in water till boiling and then leave to aside to cool, after adding bicarb soda. The bicarb soda helps to soften the dates. Another difference is the steam baked method, which I believe is what keeps the pudding moist. Try it! Everyone gave it a 'thumbs up' even my Mom who is a better cook than me.


The next Australian Masterchef series is now open for people to apply. My hubby thinks I should put me name in.


Notes:
  • You can make the pudding in a small round cake pan as well.
  • I added Kahlua to the butterscotch sauce. You could also add Tia Maria, quantity to suit your taste.

    thanks Charmaine, for coming by with your sweet words, so kind of u. first time here, i catch a glimpse of your lovely daughters helping u in the kitchen, n what pretty cupcakes u all made for you mom! my boys were more inclined to help me with simple bakes here n there, but as they grew, it got harder to rope them in! maybe my lil girl will show more interest? can't help but saw your lil one is also Caitlin! (ours spelt with K, but it's the same, almost)!
