Cupcakes for Caitlin

Caitlin will be celebrating her 4th birthday at her day-care centre tomorrow. Today, we were busy baking little cuppies for her friends. Ashleigh, and our friends, Joyce and Aunty Rosie came over to help decorate the cupcakes. Later in the afternoon, we were joined by official taste-testers - Kev and hubby.

The three decoraters did a great job - so colourful!





375gm unsalted butter
1 1/2 cups caster sugar
1 teaspoon vanilla extract
6 eggs, lightly beaten
3 cups plain flour, sifted
1 tablespoon baking powder

  1. Cream butter and sugar until light and creamy. Add in the vanilla extract.
  2. Slowly add in the lightly beaten eggs, one a time. Mixture will look curdled.
  3. Finally add in the sifted flour and baking powder.
  4. Makes about 24 standard size cupcakes or 50 little cupcakes.
