The three decoraters did a great job - so colourful!
375gm unsalted butter
1 1/2 cups caster sugar
1 teaspoon vanilla extract
6 eggs, lightly beaten
3 cups plain flour, sifted
1 tablespoon baking powder
- Cream butter and sugar until light and creamy. Add in the vanilla extract.
- Slowly add in the lightly beaten eggs, one a time. Mixture will look curdled.
- Finally add in the sifted flour and baking powder.
- Makes about 24 standard size cupcakes or 50 little cupcakes.
