Lunchbox Idea #9 - All in One Quiche

Initially, we had plans to head up to Central Coast with friends today but the awful weather during the long weekend meant we had to change our plans. In the end, we ended up at the Salionas home for day of feasting. It was lovely to be indoors and our children had fun playing on their iPods, Xbox and other games (it's great that they can entertain themselves).

I made this all-in-one quiche for lunch. It's a keeper. The original recipe can be found here. Here's my version.

3/4 cup pastry mix (see note)
3/4 cup grated cheese
1 teaspoon butter, softened
5 eggs, lightly beaten
1 cup milk
3 corn cobs, remove kernels
1/2 red capsicum, diced
1 medium-size onion, finely diced
1 zucchini, finely diced
1 small roast chicken, skin removed, meat shredded
1 tablespoon flat-leaf parsley, chopped
  1. Preheat oven to 180°C. Lightly grease a 3cm deep, 24cm (base) quiche dish.
  2. Combine pastry mix, cheese, butter, eggs and milk in a bowl. Stir well.
  3. Add corn, onion, basil, chicken, tomato, parsley, and salt and pepper to egg mixture. Mix well. Pour into prepared quiche dish. Bake for 40 to 45 minutes or until golden and firm to the touch. Serve.
Note: Pastry mix is a dry mix. Look for it near the flour in your supermarket. You can also replace the chicken, with salmon or ham.

  1. Glad you managed to have a good time anyway with your friends. I hope this weather lets up soon! The quiche sounds like a great lunch treat, I like to make it for picnics.

  2. It is good that your change of plans did stop your kids from having fun. Quiche is perfect for lunch.
