Fresh Lotus Root Soup

When I first came to Australia, it was impossible to buy fresh lotus root (leng gau). To make the soup, I had to use the frozen ones from the Asian grocery stores. In recent years, the Asian grocery stores sell the fresh lotus roots and also burdock (another root vegetable good for soup).

I bought a small piece today to boil soup with red dates and pork shin.
